Cornicabra (Spain)

Description

This fabulous Cornicabra variety is very complex with flavors or both ripe fruit and green fruit flavors.  The flavor is present with ripe berries, cherry, fresh herbs, and bright citrus.  The aroma of this oil is a wonderful mix of sweet berries and tart lemons, mixed with thyme, fresh grass and rosemary.  It’s perfectly balanced with medium bitterness and strong pungency that matches the intense fruitiness.  It tastes very fresh and has a warming, peppery finish blended with baking spices that lingers and prevails over the tannic bitterness.  Olive oil does not get any better!  Very high oleic acid at 79.82.
