18 Year Traditional Style
Our finest grade of aged balsamic condimento from Modena, Italy is produced in the Traditional Style. It is aged using the Solera System for up to 18 years in chestnut, oak, mulberry and ash barrels. With 4% acidity, it exceeds Four Leaf Quality with an astonishingly high natural density. This spectacular density comes naturally without thickeners or added sugar, from a lengthy aging process and cooking in copper kettles. It is exceedingly rich, complex and dense and pairs beautifully with any olive oil in our collection. Use for vinaigrettes, glazes, marinades, bread dipping, drizzling over fruit, vegetables or to marinate meat and poultry.
Black Cherry Balsamic
The Amarena cherry is a small bitter, dark colored Italian cherry grown in Bologna and Modena. Our Amarena cherry is a flavor explosion of cherry and grape must that is at once sour and bitter. Pair this vinegar with Persian Lime, Chipotle, Basil or Blood Orange olive oil for a deliciously well-balanced vinaigrette or to cook leafy greens. Great over roasted duck, to use as a reduction, marinade for beef, pork, chicken and lamb, over fruit, and in a dessert.
Black Garlic Balsamic
Our sweet black garlic dark balsamic, reminiscent of Asian cuisine, is perfect for drizzling over stir-fried chicken or pork. Blackberry Ginger Balsamic

Blueberry Balsamic
This luscious blueberry infusion is just as amazing over a garden salad as it is over a fruit salad. The nose of this vinegar is true to fruit: aromatic, ripe blueberries with sweet accents and juicy blueberry flavor. When paired with a mild EVOO, the intense blueberry flavor shines through. Try this balsamic as a substitute for maple syrup. Reduce it and use it as a glaze for roasted chicken. It is also fantastic when combined with Lemon olive oil to make a spinach – pear salad vinaigrette and is a wonderful complement to blue and feta cheeses.
Champagne Vinegar
Our Champagne Vinegar hails from the Ardenne region of France. This elegant wine vinegar introduces a touch of crisp, creamy, acidity to many vinaigrettes, marinades, and sauces. Use in beurre blanc or to brighten up other butter based sauces, homemade mayo or aioli, pickling, and preserving! Excellent when paired with a single varietal Evoo, Garlic, Milanese Gremolata, Rosemary, and so many more.
Chocolate Balsamic
This vinegar’s fruity and pruney center notes pair perfectly and infuse chocolate flavor into your favorite recipes. Use for marinating meats such as slow-cooked pulled pork, braised meats, or as a replacement for sugar in your favorite baked goods. Cinnamon Pear Balsamic
The rich Sri Lankan toasted cinnamon aroma and the sweet taste of Anjou pear are harmoniously combined to make a savory and sweet balsamic vinegar. Paired with Blood Orange olive oil, it makes a delicious vinaigrette for a festive spinach and baby arugula salad; top it with slices of fresh pear, toasted pecans, and dried cranberries. This balsamic can also be used as a marinade for pork or poultry. Vanilla ice cream becomes fruity vanilla cinnamon bun pear ice cream with just a drizzle.
Coconut White Balsamic
Natural coconut extract blended with our high quality white balsamic base give this vinegar a sweet, distinct flavor that is truly reminiscent of fresh shaved coconut. The creamy and velvety texture of this vinegar is brightened by a slightly tangy finish. Excellent when combined with Toasted Sesame Seed oil to marinate swordfish, but it is just as good when used to make coconut panna cotta. Cranberry Pear White Balsamic
Our Cranberry Pear Rosé Fruit Vinegar is violet in color, highlighting the natural cranberry fruit kissed with a small addition of delicate pear purée, which adds a wonderful body and mouthfeel to this vinegar. The fruity, sour, and tangy notes of cranberries paired with the sweetness of the pear purée give this fruit vinegar a distinctive and bright flavor. In comparison with our Traditional 18 Year Style balsamic, our I.G.P. is agreeably more savory with just the right amount of sweetness. Such characteristics can be attributed to the quantities of barrel aged wine vinegar and grape must used in this delicious Gold Line batch of balsamic. This beautiful wine vinegar is garnet red in color, slightly tannic on the finish, and has a lower acidity than most aged wine vinegars on the market at 4.5%.
