18 Year Traditional Style

Our finest grade of aged balsamic condimento from Modena, Italy is produced in the Traditional Style.  It is aged using the Solera System for up to 18 years in chestnut, oak, mulberry and ash barrels.  With 4% acidity, it exceeds Four Leaf Quality with an astonishingly high natural density.  This spectacular density comes naturally without thickeners or added sugar, from a lengthy aging process and cooking in copper kettles.  It is exceedingly rich, complex and dense and pairs beautifully with any olive oil in our collection.  Use for vinaigrettes, glazes, marinades, bread dipping, drizzling over fruit, vegetables or to marinate meat and poultry.

Black Cherry Balsamic

The Amarena cherry is a small bitter, dark colored Italian cherry grown in Bologna and Modena. Our Amarena cherry is a flavor explosion of cherry and grape must that is at once sour and bitter. Pair this vinegar with Persian Lime, Chipotle, Basil or Blood Orange olive oil for a deliciously well-balanced vinaigrette or to cook leafy greens.  Great over roasted duck, to use as a reduction, marinade for beef, pork, chicken and lamb, over fruit, and in a dessert.

Black Garlic Balsamic

Our sweet black garlic dark balsamic, reminiscent of Asian cuisine, is perfect for drizzling over stir-fried chicken or pork. This vinegar’s flavors include ample umami, soy, garlic, and a hint of licorice, complementing the cooked grape must. Use it in vinaigrettes, Asian sauces, and marinades, and drizzle over steamed leafy green vegetables to enhance the vinegar’s aroma.

Blackberry Ginger Balsamic

Combining the flavor of delicate blackberries and the gentle heat of ginger, this vinegar is truly a unique creation for sweet desserts, marinades, drizzled over fresh fruit, veggies, or vinaigrettes. Our Blackberry Ginger balsamic is wonderfully sweet, pleasingly tart, and redolent with the clean, natural flavor of blackberry and ginger. It makes a fantastic dressing or  marinade and is divine paired with our Persian Lime, Blood Orange, and Basil Olive Oils, and Roasted Walnut and Roasted Sesame Oils.

Blueberry Balsamic

This luscious blueberry infusion is just as amazing over a garden salad as it is over a fruit salad. The nose of this vinegar is true to fruit: aromatic, ripe blueberries with sweet accents and juicy blueberry flavor. When paired with a mild  EVOO, the intense blueberry flavor shines through. Try this balsamic as a substitute for maple syrup. Reduce it and use it as a glaze for roasted chicken. It is also fantastic when combined with Lemon olive oil to make a spinach – pear salad vinaigrette and is a wonderful complement to blue and feta cheeses.

Champagne Vinegar

Our Champagne Vinegar hails from the Ardenne region of France. This elegant wine vinegar introduces a touch of crisp, creamy, acidity to many vinaigrettes, marinades, and sauces. Use in beurre blanc or to brighten up other butter based sauces, homemade mayo or aioli, pickling, and preserving! Excellent when paired with a single varietal Evoo, Garlic, Milanese Gremolata, Rosemary, and so many more.

Chocolate Balsamic

This vinegar’s fruity and pruney center notes pair perfectly and infuse chocolate flavor into your favorite recipes.  Use for marinating meats such as slow-cooked pulled pork, braised meats, or as a replacement for sugar in your favorite baked goods.  Pair this balsamic with Chipotle olive oil to make a perfect mole sauce or mix with Bloor Orange olive oil or Walnut oil to make a delicious marinade.  Fine cheeses and gelato are enhanced by this one of a kind vinegar.  Did we mention that it is to die for in chocolate martinis?

Cilantro Garlic White Balsamic

The intense aroma and flavor of freshly chopped cilantro is kissed by a gentle touch of roasted garlic in this sublime savory white balsamic condimento.  The balance of savory, sweet, earthy, and floral with a sharp midpoint and soft, lingering finish is sure to compliment many dishes!  Perfect in salsas, over corn, grilled shrimp, pulled pork, guacamole and grilled chicken salad!  Pairs well with Persian Lime, Garlic, Cilantro Onion and Blood Orange Olive Oils.

Cinnamon Pear Balsamic

The rich Sri Lankan toasted cinnamon aroma and the sweet taste of Anjou pear are harmoniously combined to make a savory and sweet balsamic vinegar. Paired with Blood Orange olive oil, it makes a delicious vinaigrette for a festive spinach and baby arugula salad; top it with slices of fresh pear, toasted pecans, and dried cranberries. This balsamic can also be used as a marinade for pork or poultry. Vanilla ice cream becomes fruity vanilla cinnamon bun pear ice cream with just a drizzle.

Coconut White Balsamic

Natural coconut extract blended with our high quality white balsamic base give this vinegar a sweet, distinct flavor that is truly reminiscent of fresh shaved coconut. The creamy and velvety texture of this vinegar is brightened by a slightly tangy finish. Excellent when combined with Toasted Sesame Seed oil to marinate swordfish, but it is just as good when used to make coconut panna cotta. Drizzle over pineapple, blueberries, strawberries and ice cream.  Add to sparkling water for a fabulous cocktail…my personal favorite!   Pairs well with Persian Lime, Chipotle, Lemon and Butter Olive Oils and Roasted Sesame Oil.

Cranberry Pear White Balsamic

Our Cranberry Pear Rosé Fruit Vinegar is violet in color, highlighting the natural cranberry fruit kissed with a small addition of delicate pear purée, which adds a wonderful body and mouthfeel to this vinegar. The fruity, sour, and tangy notes of cranberries paired with the sweetness of the pear purée give this fruit vinegar a distinctive and bright flavor. Mix it with your favorite Olive Oil to make a delightful vinaigrette for roasted beets or other root vegetables. Use it in your traditional cranberry sauce for an added dimension. Add it to sautéed apples and pears before serving over roasts or mix it with any braised meats. Cucumber Melon White Balsamic

Espresso Balsamic

Our espresso balsamic is crafted using decaffeinated Italian espresso as an ingredient. Expect to feel the fine espresso granules that enhance this vinegar’s long, rich, and velvety finish. Pair this vinegar with any Medium Super Premium EVOO, Chipotle infused olive oil or Roasted Walnut oil for a marvelous, easy vinaigrette that can be used for salads or as a marinade for grilled steak or pork. Try this vinegar in a martini or over vanilla gelato for a unique experience.

Fig Balsamic

Sweet, sour and jammy notes of red fruit, ripe Italian fig and a hint of plum. This vinegar blends delicate acidity with Italian fig purée achieving the perfect nose and texture meant to complement any salad, cheese plate, relish, or marinade. This classic Mediterranean ingredient shines and exudes unmistakable sweet and fruity flavors. Pair this balsamic with Blood Orange olive oil for a flavorful salad dressing or Garlic olive oil for a sweet and savory pork or steak marinade.

Garlic White Balsamic – Discontinued

With blossoming notes of sweet roasted garlic, pleasant persistency, bright acidity, and a long finish, this white balsamic is sure to be a crowd pleaser!  Perfect for Greek salads, marinades for grilled vegetables and meats, in garlic aioli, and how about a Bloody Mary!  Pairs well with Lemon, Chipotle, and Tuscan Herb olive oils.

Habanero Honey Vinegar

The sweet and sour notes of our honey vinegar base are beautifully balanced by an assertive kick of habanero.  The flavor complexity of this vinegar shines through in stir frys, vinaigrettes, fresh salsas, and more.  Even simply drizzling this over chilled slices of watermelon or pineapple creates an unforgettable dish.

Hickory Smoked Balsamic

This vinegar will become your best secret ingredient to add a delightful smoky sweet flavor to grilled meats, chicken, vegetables, and seafood.  Use this on anything going onto your grill or into your smoker, or to jazz up baked beans or homemade barbecue sauce.  Pairs exceptionally well with Garlic, Blood Orange, and Rosemary Olive Oils.

Honey Ginger White Balsamic

I.G.P. Balsamic Vinegar

Certified I.G.P. by the Consorzio di Modena, this balsamic was artfully crafted with the highest amount of Italian grape must to balance out this vinegar’s 6% acidity. The resulting product is a well-balanced, rich, sharp, and velvety-smooth balsamic. In comparison with our Traditional 18 Year Style balsamic, our I.G.P. is agreeably more savory with just the right amount of sweetness. Such characteristics can be attributed to the quantities of barrel aged wine vinegar and grape must used in this delicious Gold Line batch of balsamic. This multifaceted and versatile vinegar is just about the perfect ingredient for all manners of food, but most importantly, it is very well-suited for those on special diets and the ideal pairing for any olive oil.

Italian Mango Fruit Vinegar

Our Italian Mango fruit vinegar is a true-to-fruit version of the mango fruit that is enjoyed across the Mediterranean.  This fruit vinegar is both rich and velvety with a natural sweetness that projects rich, bright, and sweet flavors.  Pair it with Cayenne or Chipotle Olive Oil for a sweet and spicy marinade or add it to your favorite cocktail.  Perfect to finish gelato or vanilla ice cream.  Also pairs well with Bloor Orange, Persian Lime, Basil and Cilantro Onion Olive Oils.

Lavender Balsamic – Discontinued

Our Lavender Balsamic captures the true essence of a lavender field in the south of France:  floral, fruity, herbaceous, and slightly sweet.  Create a marinade to add a whole new flavor profile to chicken, lamb or pork.  This vinegar can also be cooked down with dark chocolate to create the perfect finishing sauce.  Pairs well with Blood Orange, Lemon, Basil and Rosemary Olive Oils.

Maple Balsamic

The sweet and savory aroma of maple syrup is captured in this exceptionally sweet balsamic condimento. Oregano White Balsamic

Earthy and slightly sweet, our Oregano White Balsamic vinegar is very aromatic and savory. It is truly the ideal vinegar for many Mediterranean – inspired dishes. This vinegar’s clean and fresh edge makes it an outstanding pantry staple that pairs wonderfully with our Garlic, Basil, Tuscan Herb, and Chipotle Olive Oils on a salad. Pomegranate Balsamic

Pomegranate is a perpetual favorite; its distinctive flavor and versatility make it ideal for a wide array of foods. The delicate flavor of pomegranate is both tart and sweet, characteristics that perfectly complement the Traditional 18 Year Style dark balsamic base. This vinegar is sweet and succulent, with a velvety rich texture that pairs beautifully with Persian Lime olive oil for basting roasted Brussels sprouts or with leafy greens. Excellent as a glaze for lamb, it also makes an incredible reduction that is delicious over salmon or when drizzled over fresh fruits.  Also pairs well with Dill, Rosemary and Basil Olive Oils.

Raspberry Balsamic Vinegar

Italian raspberry purée and our rich Traditional 18 Year Style dark balsamic base are blended together to create a vinegar that is rich and velvety with delicate notes of Italian raspberries. Unlike many flavored dark balsamic vinegars, this raspberry balsamic condimento is both delicate and fruity, lending itself well to traditional vinaigrettes, fine cheeses, and marinades. Our customers love pairing it with Persian Lime, Blood Orange and Basil Olive Oils, and Roasted Walnut olive oil for a rich and fruity vinaigrette.

Red Apple Balsamic

The delicate, floral and sweet Gala Apple has a bright, sweet flavor that makes it delightful in sauces, chutneys, and on salads. This amazingly flavorful balsamic is also delicious drizzled over poultry, pork, fish, and even apple crisp. A staff and customer favorite in vinaigrettes or marinades using Roasted Walnut oil or Garlic olive oil.  Also pairs extremely well with Basil and Blood Orange olive oil on a salad.

Vinoso – Barbaresco Red Wine Vinegar

Vinoso is very well suited for salads as it imparts an intense depth of flavor into your favorite vinaigrette recipes.  This beautiful wine vinegar is garnet red in color, slightly tannic on the finish, and has a lower acidity than most aged wine vinegars on the market at 4.5%.  Combine it with any of our olive oils, some finely minced garlic, a smidgen of Dijon mustard, a pinch of salt and there you have it, the perfect salad dressing!  Just a spoonful of this fantastic vinaigrette is enough to brighten up any salad.

Rose’ White Balsamic

Our Rose’ Balsamic condimento is an exclusive product – a first to market!  Made from Pinot Noir grape variety, it truly boasts an impressive grape pedigree and highlights everything we enjoy about rose’ wine: bright acidity and soft, subtle aromas of crabapple, watermelon, raspberries, strawberries, and wet stone.  This grape variety produces earthy, but elegant wines that translate beautifully into a well-balanced, clean, cool, crisp and dry vinegar.  For a delicious vinaigrette, combine it with your favorite olive oil and Dijon mustard.  The velvety consistency will lovingly caress everything from salad greens to grill-bound asparagus and seafood.  Pairs well with Blood Orange, Basil and Milanese Gremolata Olive Oils.

Sicilian Lemon White Balsamic

Our Sicilian lemon white balsamic is exceptionally versatile.  It has both bright and sweet notes without the bitter and sour flavors characteristic of most lemon varieties.  An all-around staple in the Mediterranean diet, this vinegar pairs nicely with just about any infused or Robust EVOO.  Add a splash in sparkling water, use it in a vinaigrette, over white fish, as a marinade for chicken and pork, over vegetables, or pasta salad.  Pairs well with Basil, Garlic, Tuscan Herb, Milanese Gremolata and Persian Lime olive oils.

Strawberry Balsamic

A flavor explosion of sweet and tart strawberries that perfectly balances the rich, pruney, and jammy balsamic base. This vinegar shines with fruity notes that make it the perfect pairing for just about any of our EVOO. Our staff and customers love pairing Strawberry balsamic with Basil olive oil to make the most delicious vinaigrette for kale, spinach, or arugula salad. Incidentally, the same combination is just as good when used as a marinade for grilled chicken.

Sweet Peach White Balsamic

We like Peach white balsamic in salad dressings, marinades, chutneys, and in sweet glazes on smoky barbecue. Our true-to-fruit Peach balsamic epitomizes the flavors of freshly picked, ripe peaches immersed in the highest quality white balsamic. A flavor explosion of fruity and sweet sensations coupled with floral overtones and just a touch of acidity, it can be used in numerous applications. Teriyaki Balsamic

Introducing a healthier alternative to the generic bottled teriyaki sauce.  This sweet, salty, tangy balsamic is sure to be a hit during grilling season!  An excellent compliment to any marinade for beef, chicken or tofu, a unique ingredient to splash into fried rice or stir fry, and a delicious option to brush over grilled salmon, veggies, or pineapple!  Prominent notes of tangy ginger and a hint of sweet lemongrass are balanced with a slight shoyu-like saltiness.  Excellent with paired with Garlic, Blood Orange, Basil and many more Olive Oils.

Watermelon Rose’ Fruit Vinegar

This vinegar is the perfect addition to summer spritzers, cocktails, and shrubs.  Combine it with Basil olive oil and drizzle over mixed greens topped with sliced tomatoes, cucumber, red onions, crumbled feta cheese, and juicy watermelon: summer in a bowl.  The sweet and slight tang of this vinegar makes it a great alternative to sugar in homemade popsicles.  It is also fantastic when reduced over low heat and used as a glaze to finish pan seared sea scallops.
