Cranberry Nut Bread


  • 2 C All-purpose flour
  • 1 C Sugar
  • 1 1/2 t Baking powder
  • 1 t Salt
  • 1/2 t Baking soda
  • 3 T The Olive Grove’s Blood Orange Evoo or Roasted French Walnut Oil
  • 1 Egg
  • 3/4 C Orange juice
  • 1 T Orange zest, grated
  • 1 1/2 C Cranberries, frozen
  • 1/2 C Walnuts, chopped (optional)


Preheat oven to 350 degrees. Grease an 8×4 inch loaf pan. In a medium bowl, mix together the flour, sugar, baking powder, salt and baking soda. Pour in the oil and mix together until the mixture is coarse. In a small bowl, beat the egg, orange juice and orange zest. Blend into the dry mixture. Stir in the cranberries and walnuts. Transfer to the loaf pan. Bake for 60 minutes. Let cool for 10 minutes and serve.

Makes 10 servings.
