Ingredients:
- 8oz The Olive Grove’s Orzo Pasta
- 5oz Fresh spinach, finely chopped
- 1/3C Feta cheese, crumbled
- 1/4C Red onion, finely chopped
- 1C Cherry tomatoes, halved
- 1/2 tsp Basil, dried
- 1/4C The Olive Grove’s Tuscan Herb, Pizzaioli or Basil Extra Virgin Olive Oil
- 1/4C The Olive Grove’s Traditional 18-Yr Style or Red Apple Balsamic Vinegar
- 1pinch Salt
Directions:
Cook orzo pasta according to package directions; drain and rinse with cold water. Transfer to a large bowl and stir in spinach, feta, onion, tomatoes, basil and salt. Toss with olive oil and balsamic vinegar. Refrigerate and serve cold.
