- 4 Sweet potatoes, scrubbed clean
- 4T The Olive Grove’s Butter flavored Olive Oil, or your favorite Super Premium Evoo such as Koroneiki or Arbequina
- 1/2C Creme fraiche
- 4T The Olive Grove’s Maple Balsamic Vinegar
- 2oz Pancetta, diced
- Salt and Pepper to taste
Preheat oven to 425 degrees. Pierce each sweet potato with a fork a few times, and place on a baking sheet, leaving room for the pancetta later. Bake 15 minutes and remove from oven. Add pancetta to the baking sheet and cook another 30-35 minutes until you can easily stick a fork in the potato. Remove from oven and let cool. Slice open vertically and top with olive oil, creme fraiche, balsamic vinegar, pancetta, salt and pepper. Enjoy!
