Caprese Zucchini Salad


  • 2 medium Zucchini, spiralized, or sliced very thin
  • 1 1/4C  Cherry or Heirloom tomatoes, halved
  • 1C  Kalamata olives, halved
  • 2T  Lemon juice
  • 1/4C  The Olive Grove’s Champagne Vinegar or White Balsamic Vinegar
  • 1/4C  The Olive Grove’s Basil Olive Oil or Tuscan Herb Olive Oil
  • 1 clove  Garlic, minced
  • Salt and Pepper to taste
  • 15-20 small Mozzarella balls, halved
  • 1C  Fresh Basil, slivered


Place the zucchini, tomatoes and olives in a large bowl.  In a small food processor, mix the lemon juice, vinegar, olive oil and garlic until smooth.  Pour the marinade over the zucchini mixture and toss to combine.  Add the mozzarella and basil, toss to combine and serve.
