Citrus Avocado Salad


  • 2C  Butter leaf lettuce
  • 1/2  Fennel bulb, thinly sliced
  • 4-5  Variety of Oranges (I like the combination of blood orange, cara cara and navel for a variety of color), peeled and pulled apart
  • 1  Avocado, peeled, pitted and thinly sliced
  • 1  Shallot, peeled and thinly sliced
  • 1/3C  The Olive Grove’s Blood Orange Olive Oil
  • 2T  The Olive Grove’s Garlic White Balsamic Vinegar
  • 1/4t  Crushed Red Pepper flakes
  • 1/4t  Sea Salt
  • 1-2T  Fennel fronds
  • 1/4C  mint leaves



In a large bowl place the lettuce, fennel, orange slices, avocado and shallot.  In a small bowl, whisk the olive oil, balsamic, crushed red pepper and salt.  Pour the dressing over the salad and mix together.  Just before serving, top with fennel fronds and mint leaves.
