Ingredients
- 4C Tomatoes
- 1/2C The Olive Grove’s Super Premium Extra Virgin Olive Oil (Picual, Koroneiki, Arbosana)
- 1/2C Chicken broth
- 3 cloves Garlic, minced
- 1/2C Heavy cream
- 1C Parmesan cheese, grated
- 1t Salt
- 1t Pepper
Directions
Puree the tomatoes, olive oil, broth, garlic, cream and cheese in a blender or food processor. Then transfer to a large pot and bring to a boil over medium heat. Reduce heat and let simmer about 15 minutes. Season with salt and pepper to taste, and serve!
Makes 8 servings
Serve with croutons, fresh slivered basil, and/or a drizzle of Basil olive oil on top!
