Greek Tortellini Pasta Salad

Such a great, filling pasta salad with a zesty dressing.  Serve as a main dish, or as a side dish with chicken.


  • 1lb Cheese tortellini pasta, cooked
  • 1C  Cherry tomatoes, halved
  • 1/2 medium Red onion, diced
  • 1 large Cucumber, peeled and chopped
  • 1/2C  Artichoke hearts, roughly chopped
  • 1/2C  The Olive Grove’s Kalamata olives, halved
  • 1/2C  Feta cheese, crumbled
  • 1/3C packed Fresh basil leaves, finely chopped


  • 1/2C  The Olive Grove’s Basil Olive Oil
  • 1/3C  The Olive Grove’s Champagne Vinegar or Apple Cider Vinegar
  • 3t Garlic, minced
  • 1t Dried oregano
  • 1t Dried basil
  • 1/2t Dried thyme
  • 2t Sugar
  • 1T Dijon mustard
  • 1/2t Sea salt
  • Black pepper to taste
  • Juice of 1/2 lemon


Combine all dressing ingredients in a bowl and whisk until blended well.  In a large bowl combine tortellini, tomatoes, onions, cucumbers, artichoke, olives, feta cheese and basil.  Pour dressing over the top, then toss to combine.  Serve immediately, or cover and refrigerate for several hours to allow the flavors to blend.  This can be served warm or cold.

Serves 4-6 as a main dish, 8-10 as a side dish
