- 2 C Mango, cubed
- 3 C (2 cans) Black Beans, drained and rinsed
- 1T Lime Juice
- 1/3 C The Olive Grove’s Chipotle or Cilantro & Onion flavored Olive Oil
- 1/3 C Cilantro, chopped
- Sea Salt and pepper to taste
In a medium sized bowl, mix the mango and black beans. In a small bowl, whisk the lime juice and olive oil together. Drizzle the dressing over the salad and mix. Add the cilantro, and season to taste with salt and pepper. Toss to combine.
Serve chilled or at room temperature. If you make this ahead, add the cilantro right before serving.
