- 1 to 1 1/4lb Salmon filet
- 2T The Olive Grove’s Ultra Premium Extra Virgin Olive Oil (Arbequina, Picholine, or Hojiblanca)
- 1 pack, about 1C Mint leaves
- 1/4C +1t The Olive Grove’s Ultra Premium Extra Virgin Olive Oil (Arbequina, Picholine, or Hojiblanca)
- 2t Lemon juice, fresh
- Zest of 1/2 lemon
- 1/8t Sea salt
Turn on broiler to low heat. Coat salmon with 2T of olive oil. Cook in broiler for 10 minutes for medium-rare. (If your salmon is cut into smaller, individual size filets already, cooking time may be less.) Let stand 5 minutes, then cut into 4 filets.
Meanwhile, in a small food processor, blend the mint, olive oil, lemon juice and zest, and salt (or finely chop the mint and whisk into the oil and lemon).
Plate the salmon and pour mint sauce over the top and serve.
