Sauteed Spinach with Bacon Maple Vinaigrette

Winner, even for those who claim they don’t like spinach!


  • 2T  The Olive Grove’s Bacon flavored Olive Oil
  • 3 cloves  Garlic, minced
  • 1/2C  Yellow onion, chopped
  • Approx 9oz  Spinach
  • 2T  The Olive Grove’s Vermont Maple Balsamic Vinegar
  • Salt to taste


Heat olive oil in a large skillet over medium heat.  Add garlic and onion and cook until starting to brown, about 2-3 minutes.  Add the spinach to the pan and continuously move around for about 30-45 seconds.  (If you like your spinach wilted more, cook the spinach longer.)  Remove from pan into a serving bowl.  Drizzle with balsamic vinegar.  Add salt to taste, and SERVE!
