Love pasta, but not the carbs that come along with it? Spaghetti squash will be your new best friend. This is a regular dish we enjoy year round without the guilt!
- 1 medium sized Spaghetti squash
- 1T + 1/4 C The Olive Grove’s Tuscan Herb Olive Oil
- 1t The Olive Grove’s Italian Table Blend Seasoning
- 3T Grated Parmesan cheese (or as much as you like)
- Salt and Pepper to taste
Preheat oven to 350 degrees. Cut the squash in half lengthwise and remove the seeds. Rub 1T of olive oil on its flesh. Place spaghetti squash with cut sides down on the baking sheet, and bake 30 to 35 minutes in the preheated oven, or until a sharp knife can be inserted with only a little resistance. Remove squash from oven and set aside to cool enough to be easily handled.
Using a large spoon or fork, scoop out the stringy flesh into a large bowl. Mix in the olive oil, Italian seasoning, Parmesan cheese, salt and pepper.
Serve alongside steak or chicken. As a main dish, try adding ground pork sausage and marinara sauce to the recipe above.
