- 1/4C The Olive Grove’s Super Premium Extra Virgin Olive Oil, such as Carolea or Cobrancosa
- 1T Honey
- 1 Lemon, juiced and zested
- 1t Sea salt
- 1/2t Black ground pepper
- 1 medium Zucchini, spiralized, or sliced very thin
- 1 medium Summer squash, spiralized, or sliced very thin
- 1 pint Cherry or Heirloom tomatoes, halved
- 1/4C Green onions, finely chopped
- 1/4C Pine nuts, toasted
In a small bowl, whisk the olive oil, honey, lemon juice, salt and pepper. In a large bowl, toss with zucchini, summer squash, tomatoes, green onions and pine nuts.
Serve salad on its own as a side, over greens, or over salmon.
