Summer Squash Salad


  • 1/4C  The Olive Grove’s Super Premium Extra Virgin Olive Oil, such as Carolea or Cobrancosa
  • 1T  Honey
  • 1  Lemon, juiced and zested
  • 1t  Sea salt
  • 1/2t  Black ground pepper
  • 1 medium  Zucchini, spiralized, or sliced very thin
  • 1 medium  Summer squash, spiralized, or sliced very thin
  • 1 pint  Cherry or Heirloom tomatoes, halved
  • 1/4C  Green onions, finely chopped
  • 1/4C  Pine nuts, toasted


In a small bowl, whisk the olive oil, honey, lemon juice, salt and pepper.  In a large bowl, toss with zucchini, summer squash, tomatoes, green onions and pine nuts.

Serve salad on its own as a side, over greens, or over salmon.

Makes 4-6 servings
