Walnut & Cheese Ravioli


  • 16oz package  Cheese ravioli, frozen or fresh
  • 1/3C  The Olive Grove’s Roasted French Walnut Oil
  • 1 clove  Garlic, minced
  • 1C  Walnut, roughly chopped
  • 2t  Lemon juice
  • 1/2C  Parsley, fresh, chopped
  • 1/4t  Pepper
  • 1/4C  Parmesan cheese, grated


Cook the ravioli according to its package.  Drain, reserve 4 tablespoons of the cooking water.  Meanwhile, heat the walnut oil in a medium skillet over medium heat.  Add the garlic and walnuts.  Cook stirring, until the nuts are lightly toasted and fragrant, about 5 minutes.  Stir in the lemon juice, parsley, pepper and the reserved cooking water.  Add the ravioli and toss to coat.  Divide among plates and sprinkle with the Parmesan cheese.

Serves 4
